Sunday cooking: spinach and couscous salad

Another one of my personal favourites is this salad. Most perfect for summer, for example for a barbecue πŸ™‚ My mom hates it when we basically only eat meat, so we tried to add some less ‘neanderthaler’ food to it as well this time πŸ™‚

What do you need?Β 

  • 125 ml warm bouillon with herbs
  • 75 g couscous
  • 2 table spoons of olive oil, extra vierge, add some chilli powder to this
  • 2 table spoons lemon juice
  • 1 (red) onion
  • 100 g fresh spinach
  • 1 yellow pepper (paprika)
  • feta cheese

How do you make it?

Boil water, make the bouillon and add it to the couscous (the easiest is to put it in a bowl or deep plate), just leave it like this and occasionally go through it with a fork to make sure all the couscous can soak up the bouillon. Make a mix of the olive oil with chilli powder and the lemon juice and then add the chopped onion to it. Put the spinach in a bowl, add the mix with the onions, the chopped pepper, feta cheese and couscous to it and you’re done already! Bon appetit!
