Well… Caprese salads are always a win, and the same goes for spaghetti carbonara. Really, I enjoyed this dinner SO much, haha! To feel a bit better, and to variate it a bit, I added some more vegetables to the pasta than usual.
What do you need?
- 2 mozarella balls (hahaha that doesn’t sound very appetizing)
- 3 tomatoes
- black pepper, salt and olive oil
- 2 á 3 eggs
- rasped cheese
- 1 onion
- bacon cubes
How do you make it?
For the insalata caprese: slice both the tomatoes and the mozarella and ‘staple’ it as you see in the photo. Add a bit black pepper, salt and olive oil and… ready!
Cook the pasta and broccoli and fry the cut onion. Add the eggs to a bowl and mix it with some rasped cheese. Add the bacon cubes to the onion, but prevent it from getting crispy. Add the sliced/cubed mushrooms. When the pasta is ready, remove the water and add the egg-cheese mix to it. Then add all of this to the pan with the onions etc. and keep stirring it until the egg has become solid. Add the broccoli and you’re ready to go!
