Last week, we decided to prepare a variation of my favourite noodle recipe, one with mango. And although we weren’t sure about what to expect, it was more than delicious and definitely worth sharing with you guys !
What do you need?
- Teriyaki sauce
- Zucchini (do you notice I ALWAYS put zucchini in my recipes? ;))
- Mushrooms (same goes for this, haha)
- Snow peas (peultjes)
How do you make it?
First slice the mango, zucchini (in cubes) and the mushrooms (also in cubes). Heat up some water and while you’re waiting for it to cook, put first the zucchini and the noodles and after a few minutes also the snow peas in a wok pan (first heat up some oil in it). Prepare the noodles as explained on the package. I like it more to keep the vegetables rather crisp and raw (which is better than almost overcooked in terms of nutrition anyway), but when it’s at the point that you like them the best, you can add the teriyaki sauce (decide yourself how much you think is needed.. it shouldn’t be ‘saucy’ but rather just add a flavour and make the meal less dry). Then mix the noodles with the vegetables (ha-ha, hell of a work..) and put the mango slices on top. Bon appetit!
