Sunday cooking: pasta with spinach and sundried tomatoes <3

This is by far my favourite pasta recipe at the moment! It was invented by me and my roomie, when we  literally made a mix of all kind of ingredients that we still had in the fridge! it’s super delicious 🙂

What do you need?

  • Green pesto
  • Soured cream (crème fraîche)
  • Spinach (fresh, not deepfreeze)
  • Pasta
  • Mushrooms
  • Feta cheese
  • 1 can of sundried tomatoes

How do you make it?

Prepare the pasta as usual. Mix the crème fraîche with the pesto to something that you like yourself: I like it better when the pesto is not too strong, which usually requires about a table spoon of pesto. Cut the mushrooms and feta cheese in cubes, and the sundried tomatoes in parts.

Heat some oil in a wok, add the mushrooms and cook them according to your personal taste (I prefer them to be not too cooked and soft), then add the tomatoes and mix it all. After a few minutes, you also add the feta cheese and some hands of spinach. I prefer the spinach to be rather raw, which only requires a couple of minutes in the wok, but of course this is, also, up to your personal taste.

When the pasta is ready, mix it with the pesto-crème fraîche mix and then add it to the vegetables in the wok 🙂

One of my favourite recipes is a pasta from spinach, herb cheese and bacon… It is super easy, fool-proof and oh-so delicious

What do you need?

  • Deep freeze spinach (one box)
  • Bacon cubes
  • Herb cheese (Boursin for the Dutchies,  2 packages)
  • Pasta

How to make it?

First, cook water for the pasta and cook it. At the same time, you fry the bacon cubes, but make sure they do not become crispy. If they are almost ready, you add the spinach so that is can defrost. As soon as it is almost done, you add the cheese, let it melt and when that happens: it is finished already! Super easy! Add it to the pasta and enjoy =) Bon appetit.
